Pumpkin Patch Deviled Eggs

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons pumpkin puree
  • 1 small carrot, grated

Instructions

  1. Hard boil the eggs by placing them in a pot and covering them with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
  2. Cool the eggs in ice water and peel when cooled.
  3. Cut the eggs in half and remove the yolks. Place yolks in a bowl and mash with a fork.
  4. Add mayonnaise, Dijon mustard, pumpkin pie spice, salt, and pumpkin puree to the mashed yolks. Mix until smooth.
  5. Transfer the mixture back into the egg whites.
  6. Decorate the tops with grated carrot to resemble a pumpkin patch.
