  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the dry ingredients: flour, brown sugar, granulated sugar, baking powder, baking soda, spices, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until combined.
  5. If desired, fold in the chopped nuts.
  6. Pour the batter into a greased baking pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
