Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture and stir until just combined.
  6. In a separate bowl, beat the cream cheese with the powdered sugar until smooth.
  7. Pour a spoonful of the muffin batter into each muffin liner, followed by a dollop of cream cheese mixture, then top with more batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
