  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup white chocolate chips

Instructions

  1. In a large bowl, combine pumpkin puree, sugar, and butter. Mix until smooth.
  2. Add eggs and vanilla extract. Blend well.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  4. Gradually add dry ingredients to the pumpkin mixture until just combined.
  5. Pour the batter into a greased cake pan and bake at 350°F (175°C) for 25-30 minutes.
  6. Let the cake cool completely, then crumble it into a large bowl.
  7. Add cream cheese and mix until combined.
  8. Form into small balls and place on a baking sheet.
  9. Melt white chocolate chips and dip the ends of the lollipop sticks into the chocolate before inserting them into the cake pops.
  10. Coat each cake pop in the melted chocolate and let set.

Notes

  • For an extra touch, add sprinkles after coating the cake pops with chocolate.
  • These can be made ahead of time and stored in the refrigerator.
