- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1 cup white chocolate chips
- In a large bowl, combine pumpkin puree, sugar, and butter. Mix until smooth.
- Add eggs and vanilla extract. Blend well.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
- Gradually add dry ingredients to the pumpkin mixture until just combined.
- Pour the batter into a greased cake pan and bake at 350°F (175°C) for 25-30 minutes.
- Let the cake cool completely, then crumble it into a large bowl.
- Add cream cheese and mix until combined.
- Form into small balls and place on a baking sheet.
- Melt white chocolate chips and dip the ends of the lollipop sticks into the chocolate before inserting them into the cake pops.
- Coat each cake pop in the melted chocolate and let set.
