- 2 cups black beans, cooked
- 1 cup turkey bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 cup fresh cilantro, chopped
- 1/2 cup corn, frozen or fresh
- 2 jalapeños, diced (optional)
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same skillet, add onion and garlic, cooking until softened.
- Add the cooked black beans, corn, cumin, chili powder, jalapeños (if using), and half of the bacon.
- Stir well and cook for 5-7 minutes, allowing flavors to meld.
- Garnish with fresh cilantro and remaining bacon before serving.
