  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1/2 cup unsalted butter, softened
  • 1 cup ricotta cheese
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the mascarpone and ricotta cheeses, mixing until well combined.
  4. Add the eggs one at a time, then stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Fold in the chopped pistachios.
  8. Divide the batter between the prepared cake pans and smooth the tops.
  9. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
