  • 4 pieces chicken thighs
  • 2 cups long-grain rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 1 cup peas
  • 1 red bell pepper, diced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the chicken thighs and cook until browned on all sides.
  3. Stir in the cumin, paprika, and rice, and cook for an additional 2 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  5. Add the peas and red bell pepper, stir gently, and let cook for another 5 minutes.
  6. Remove from heat and let it sit covered for a few minutes before serving.
