  • 8 cups beef broth
  • 1 cup dried Persian barley
  • 1 cup chickpeas, cooked
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon dried mint
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 bunch fresh herbs (parsley, cilantro, dill), chopped
  • 2 cups egg noodles
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the beef broth and bring to a boil.
  2. Add the dried barley and simmer for 30 minutes.
  3. In a separate pan, sauté the onions and garlic until golden brown, then add to the soup.
  4. Stir in the chickpeas, turmeric, dried mint, black pepper, and salt.
  5. Continue to simmer for another 20 minutes.
  6. Add the fresh herbs and egg noodles, cooking until the noodles are tender.
  7. Finish with lemon juice before serving.

Notes

  • For a vegetarian version, substitute beef broth with vegetable broth.
  • Add more herbs for enhanced flavor.
