  • 1 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Stir in the turmeric, carrot, and zucchini, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.

  6. Stir in the chopped parsley and season with salt and pepper.
