Peanut Butter Oatmeal Cookies

  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together peanut butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, and mix until well combined.
  4. In another bowl, combine rolled oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until blended.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 10 to 12 minutes or until edges are golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
