  • 1 cup milk
  • 2 large eggs
  • 2 cups fresh peaches, diced
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, milk, and eggs.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Gently stir in the diced peaches.
  6. Spoon the mixture into the prepared muffin tin, filling each cup about 2/3 full.
  7. In a small bowl, mix together cinnamon and brown sugar. Sprinkle over the top of each cruffin.
  8. Bake for 20-25 minutes or until golden brown.
