  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced tomatoes
  • 1/2 cup cilantro, chopped

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add the bell pepper, black beans, corn, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes.
  4. Stir in the diced tomatoes and cooked pasta. Mix until well combined.
  5. Garnish with chopped cilantro before serving.

Notes

  • Try adding jalapeños for extra heat.
  • Serve with lime wedges for a zesty touch.
