Pasta alla Carbonara

Pasta alla Carbonara is a classic Italian dish that combines creamy sauce, crispy pancetta, and perfectly cooked pasta for a comforting meal.

Ingredients

  • 400 grams spaghetti
  • 150 grams pancetta
  • 4 large eggs
  • 100 grams Pecorino Romano cheese
  • 2 cloves garlic
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water until al dente.
  2. In a pan, cook the pancetta until crispy. Add minced garlic and sauté briefly.
  3. In a bowl, whisk together the eggs and grated Pecorino Romano cheese.
  4. Drain the pasta, reserving some cooking water, and add it to the pan with pancetta.
  5. Remove from heat and quickly mix in the egg and cheese mixture, using reserved pasta water to create a creamy sauce.
  6. Season with salt and black pepper to taste, and serve immediately.

Notes

  • For a richer flavor, use guanciale instead of pancetta.
