  • 1/2 pound turkey bacon
  • 1 cup chopped onions
  • 4 cups chicken broth
  • 2 cups milk
  • 1/2 cup heavy cream

  • 1/4 cup green onions, chopped

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Sauté the chopped onions in the drippings until translucent.
  3. Add diced potatoes and chicken broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Using a potato masher, mash some of the potatoes for a creamy texture.
  6. Stir in milk, heavy cream, salt, and pepper. Heat through.
  7. Serve hot, garnished with chopped green onions and crumbled turkey bacon.
