- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 6 cups chicken broth
- 2 cups chopped kale
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup small pasta
- Salt and pepper to taste
- In a bowl, mix ground beef, bread crumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Form into small meatballs and set aside.
- In a large pot, bring chicken broth to a simmer.
- Add the meatballs and cook for about 10 minutes.
- Add kale, carrots, celery, and pasta to the pot.
- Simmer until vegetables and pasta are tender.
- Adjust seasoning and serve hot.
Notes
- For a lighter version, use ground turkey instead of beef.
- Add in other vegetables as desired, such as zucchini or peas.
