One-Pot Italian Wedding Soup

A comforting, easy-to-make soup combining tender meatballs, fresh vegetables, and flavorful broth.

Ingredients

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups chicken broth
  • 2 cups chopped kale
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup small pasta
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef, bread crumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form into small meatballs and set aside.
  3. In a large pot, bring chicken broth to a simmer.
  4. Add the meatballs and cook for about 10 minutes.
  5. Add kale, carrots, celery, and pasta to the pot.
  6. Simmer until vegetables and pasta are tender.
  7. Adjust seasoning and serve hot.

Notes

  • For a lighter version, use ground turkey instead of beef.
  • Add in other vegetables as desired, such as zucchini or peas.
