One Pot Shawarma Chicken

Delicious and easy One Pot Shawarma Chicken that can be prepared in minutes and is perfect for a weeknight dinner.

  • 1 pound boneless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons shawarma spice blend
  • 1 teaspoon salt
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 cup mixed bell peppers, chopped
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chicken thighs and cook until browned.
  3. Stir in shawarma spice blend and salt.
  4. Add rice and chicken broth, bringing to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Stir in bell peppers and onion, cooking for an additional 5 minutes.
  7. Remove from heat and let sit for 5 minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier dish, add cayenne pepper to taste.
