One Pot Chicken Orzo

Easy one pot chicken orzo is a perfect weeknight meal that brings comfort and delicious flavors.

Ingredients

  • 1 pound chicken breast
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until translucent.
  2. Add minced garlic and sauté for another minute.
  3. Stir in the chicken and cook until browned on all sides.
  4. Add orzo, chicken broth, oregano, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer until orzo is cooked and chicken is done, about 15 minutes.
  6. Stir in spinach and cook until wilted.
  7. Remove from heat and stir in Parmesan cheese before serving.
