One Pot Cajun Chicken Alfredo

  • 1 tablespoon Cajun seasoning
  • 2 cups penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, bell peppers, and garlic; sauté until softened.
  2. Add sliced chicken breast and cook until browned. Season with Cajun seasoning.
  3. Stir in penne pasta and chicken broth. Bring to a boil, then reduce heat and simmer until pasta is tender.
  4. Reduce heat and stir in heavy cream and Parmesan cheese. Mix well until creamy.
  5. Season with salt and pepper to taste. Serve hot.
