One Pot Cajun Beef Pasta with lots-of-veg

A delicious and easy one pot recipe combining Cajun flavors with pasta and plenty of vegetables.

Ingredients

  • 1 pound ground beef
  • 12 ounces pasta
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 cup spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned.
  2. Add onion, bell pepper, and garlic, cooking until softened.
  3. Stir in the Cajun seasoning, followed by the pasta, vegetable broth, and diced tomatoes.
  4. Bring to a boil, then reduce heat and let simmer until pasta is al dente.
  5. Stir in spinach just before serving.

Notes

  • For extra heat, consider adding crushed red pepper flakes.
  • You can substitute the ground beef with turkey or a plant-based alternative for a lighter version.
