My Fave Birria Tacos

  • 2 pounds chuck roast
  • 2 cups beef broth
  • 3 dried guajillo chilies
  • 2 cloves garlic
  • 1 onion, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon oregano
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup diced onion
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine the chuck roast, beef broth, guajillo chilies, garlic, onion, cumin, oregano, and bay leaf.
  2. Bring to a boil and then reduce to a simmer for about 2 hours, or until the meat is tender.
  3. Remove the meat, shred it, and return to the pot to mix with the broth.
  4. Heat tortillas on a skillet until warm.
  5. Fill each tortilla with the meat mixture and top with diced onion and cilantro.
  6. Serve with lime wedges on the side.
