- 1 bunch kale
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Wash and dry the kale, then remove the stems and chop the leaves into small pieces.
- Cook the turkey bacon until crispy, then crumble it into small pieces.
- In a large bowl, combine the kale, turkey bacon, chicken ham, cherry tomatoes, red onion, and feta cheese.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
- Serve immediately or chill for 30 minutes before serving.
