- 9 sheets lasagna noodles
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 2 cups ricotta cheese
- 1 egg
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add mushrooms, salt, and pepper; sauté until softened, about 5 minutes.
- Add garlic and cook for an additional minute.
- In a bowl, mix ricotta cheese and egg until well combined.
- In a baking dish, spread a layer of marinara sauce, followed by three lasagna noodles.
- Spoon half of the ricotta mixture over the noodles, followed by half of the sautéed mushrooms and a third of the mozzarella cheese.
- Repeat the layers, finishing with the remaining maranara sauce, mozzarella, and Parmesan cheese on top.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
- Allow the lasagna to cool for a few minutes to set before serving.
- For a vegetarian option, you can add spinach or other vegetables.
