  • 4 large roasted poblano peppers
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Start by roasting the poblano peppers until they are charred, then place them in a plastic bag to steam for about 10 minutes.
  2. Remove the skins, seeds, and stems from the peppers and chop them.
  3. In a large pot, sauté the diced onion and minced garlic until fragrant.
  4. Add the chopped roasted poblanos to the pot along with the chicken broth, cumin, and smoked paprika. Bring to a boil.
  5. Reduce the heat and let simmer for 20 minutes.
  6. Stir in the heavy cream and crumbled turkey bacon, and heat through without boiling.
  7. Season with salt and pepper to taste. Serve hot.

  • This soup can be garnished with additional turkey bacon or fresh cilantro if desired.
