Mexican Street Corn Soup

A delicious and comforting Mexican Street Corn Soup made with turkey bacon for a healthier twist.

Ingredients

  • 4 cups corn kernels
  • 1 cup diced turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the corn, chicken broth, chili powder, cumin, salt, and black pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream and cook for an additional 5 minutes.
  6. Blend the soup until smooth, then stir in the chopped cilantro.
  7. Serve hot, topped with the crispy turkey bacon.

Notes

  • For a vegan option, substitute turkey bacon with smoked tempeh and use coconut milk instead of heavy cream.
