A delightful Mexican Street Corn Pasta Salad incorporating turkey bacon for added flavor!

Ingredients

  • 8 ounces pasta
  • 4 strips turkey bacon
  • 1 cup corn, grilled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • salt to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine pasta, corn, cherry tomatoes, red onion, cilantro, lime juice, chili powder, and crumbled turkey bacon.
  4. Toss to combine, season with salt to taste, and refrigerate for 30 minutes before serving.

Notes

  • For a vegetarian version, omit turkey bacon and add black beans.
