  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, cooked
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced red onion
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup shredded cheese
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then chop it into small pieces.
  3. In a large mixing bowl, combine the cooked pasta, turkey bacon, cherry tomatoes, corn, black beans, red onion, bell pepper, and cilantro.
  4. In a separate bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Top with shredded cheese and serve chilled.
