Meatballs in Pumpkin Sage Sauce

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups pumpkin puree
  • 1 cup heavy cream
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix together ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake meatballs for 20-25 minutes until cooked through.
  5. In a saucepan, heat olive oil over medium heat, then add pumpkin puree, heavy cream, and sage.
  6. Stir until well combined and heated through.
  7. Add the meatballs to the sauce and simmer for an additional 5 minutes.
  8. Serve hot and enjoy!
