Maple Pecan Roasted Sweet Potato Slices

  • 4 medium sweet potatoes
  • 1/4 cup maple syrup
  • 1/2 cup pecans, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into 1/4 inch slices.
  3. In a large bowl, combine the sweet potato slices with olive oil, maple syrup, cinnamon, and salt. Toss to coat.
  4. Spread the sweet potato slices on a baking sheet in a single layer.
  5. Sprinkle chopped pecans on top.
  6. Bake for 25-30 minutes or until tender and golden, flipping halfway through.
  7. Serve warm.
