Mac and Cheese Soup is a creamy, comforting dish that combines the flavors of traditional mac and cheese with the added goodness of turkey bacon and chicken ham.

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and set aside.
  2. In the same pot, add olive oil and sauté the onion until translucent.
  3. Add garlic and cook for 1 more minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add elbow macaroni and cook until al dente.
  6. Stir in diced chicken ham and heavy cream.
  7. Mix in shredded cheddar cheese until melted and combined.
  8. Season with paprika, salt, and black pepper.
  9. Chop the cooked turkey bacon and add back to the soup.
  10. Serve hot and enjoy.

Notes

  • For extra richness, substitute half-and-half for the heavy cream.
  • Feel free to add vegetables like peas or spinach for added nutrition.
