Low-Carb Bacon Cheeseburger Casserole

A delicious low-carb casserole packed with all the flavors of a classic bacon cheeseburger.

Ingredients

  • 1 pound ground beef
  • 6 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup onions, chopped
  • 1/2 cup pickles, chopped
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the bacon until crispy, then set aside.
  3. In the same skillet, cook the ground beef until browned, then drain excess fat.
  4. Add the onions to the skillet and sauté until translucent.
  5. In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and pepper.
  6. Add the beef mixture and crumbled bacon to the egg mixture, stirring until well combined.
  7. Stir in the chopped pickles and half of the shredded cheese.
  8. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  9. Bake for 30-35 minutes or until the casserole is set and the cheese is bubbly.

Notes

  • Let the casserole cool for a few minutes before serving for easier slicing.
