Loaded Baked Potato Soup

A creamy and delicious Loaded Baked Potato Soup with a twist of turkey bacon.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy, then remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Dice the potatoes and add them to the pot along with the chicken broth.
  4. Bring to a boil, then reduce to a simmer until the potatoes are tender.
  5. Stir in the heavy cream, cheddar cheese, and smoked paprika.
  6. Use an immersion blender to puree until smooth, if desired.
  7. Garnish with sour cream and crispy bacon before serving.

Notes

  • For extra flavor, add some green onions as a garnish.
  • This soup can be made vegetarian by omitting the bacon and using vegetable broth.
