Lemon Ricotta Pasta

A deliciously creamy lemon ricotta pasta that makes for the perfect dinner.

  • 12 ounces pasta of choice
  • 1 cup ricotta cheese
  • 1 lemon (zested and juiced)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh cracked pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine ricotta, lemon zest, lemon juice, olive oil, parmesan, salt, and pepper.
  3. Add the cooked pasta to the bowl and toss until well coated.
