  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and reserve some pasta water.
  2. In a large bowl, mix together the ricotta cheese, Parmesan cheese, lemon zest, lemon juice, olive oil, and garlic until well combined.
  3. Add the cooked pasta to the cheese mixture, tossing to coat. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  4. Season with salt and black pepper to taste.
  5. Garnish with fresh parsley before serving.
