Lemon Garlic Shrimp Zucchini Noodle

A delicious and light dinner option, featuring lemon garlic shrimp served over zucchini noodles.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and red pepper flakes, sauté for 1-2 minutes.
  3. Stir in the shrimp and cook until pink, about 3-4 minutes.
  4. Mix in lemon juice and zest, and season with salt and pepper.
