Lemon Garlic Shrimp Zucchini Noodle

A delicious and quick weeknight meal featuring zucchini noodles and shrimp in a lemon garlic sauce.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 4 cloves garlic, minced
  • 1 large lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and red pepper flakes, sauté for 1 minute.
  3. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
  4. Stir in zucchini noodles and cook for another 2-3 minutes.
  5. Remove from heat and add lemon juice and zest.
  6. Garnish with fresh parsley before serving.

Notes

  • For a creamier version, add a splash of cream or a dollop of mascarpone cheese.
  • This dish can be served cold as a salad as well.
