- 2 cups sweet potato, peeled and sliced
- 2 cups butternut squash, peeled and sliced
- 2 cups carrots, peeled and grated
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine sweet potato, butternut squash, carrots, ricotta cheese, half of the mozzarella, oregano, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer vegetables and cheese mixture, spreading evenly.
- Repeat layers until all ingredients are used, finishing with marinara sauce and remaining mozzarella on top.
- Drizzle olive oil over the top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes or until golden brown.
- Let it cool for 10 minutes before slicing and serving.
