Layered Sweet Potato Butternut Squash Carrot Lasagna Recipe

  • 2 cups sweet potato, peeled and sliced
  • 2 cups butternut squash, peeled and sliced
  • 2 cups carrots, peeled and grated
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sweet potato, butternut squash, carrots, ricotta cheese, half of the mozzarella, oregano, salt, and pepper.
  3. In a baking dish, spread a layer of marinara sauce on the bottom.
  4. Layer vegetables and cheese mixture, spreading evenly.
  5. Repeat layers until all ingredients are used, finishing with marinara sauce and remaining mozzarella on top.
  6. Drizzle olive oil over the top.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15 minutes or until golden brown.
  8. Let it cool for 10 minutes before slicing and serving.
