Layered Sweet Potato Butternut Squash Carrot Lasagna

Ingredients

  • 2 medium sweet potatoes
  • 1 butternut squash
  • 3 large carrots
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese
  • 1 teaspoon nutmeg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes, butternut squash, and carrots into thin rounds.
  3. In a baking dish, layer the sweet potatoes, followed by a layer of ricotta and marinara sauce.
  4. Add a layer of butternut squash and carrots.
  5. Repeat the layering process until all ingredients are used.
  6. Top with mozzarella cheese and nutmeg.
  7. Drizzle with olive oil and season with salt and pepper.
  8. Bake in the oven for 45-50 minutes until golden and bubbly.
  9. Let cool for 10 minutes before serving.
