Layered Sweet Potato Butternut Squash Carrot Lasagna Recipe

A delicious and healthy lasagna made with layers of sweet potato, butternut squash, and carrot.

Ingredients

  • 2 cups sweet potatoes, sliced
  • 2 cups butternut squash, sliced
  • 2 cups carrots, shredded
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the ricotta cheese, garlic powder, onion powder, salt, black pepper, and Italian seasoning.
  3. Layer the sweet potatoes, butternut squash, and carrots in a baking dish.
  4. Add a layer of the ricotta mixture and sprinkle mozzarella and parmesan on top.
  5. Repeat the layers until all ingredients are used, finishing with a layer of mozzarella and parmesan.
  6. Drizzle olive oil on top and cover with aluminum foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.

Notes

  • You can add spinach for extra nutrition.
  • Let the lasagna cool for 10 minutes before slicing for cleaner cuts.
