- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup mushrooms, sliced
- 2 cups spinach
- 1 jar (24 ounces) marinara sauce
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon oregano
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
- Add zucchini, bell pepper, and mushrooms. Cook until the vegetables are tender.
- Stir in the spinach and cook until wilted. Remove from heat.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 noodles on top of the sauce, then spread half of the ricotta cheese over the noodles.
- Add half of the cooked vegetable mixture, half of the mozzarella, and a sprinkle of basil and oregano.
- Repeat the layering process, ending with noodles topped with marinara sauce and remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For extra flavor, add crushed red pepper flakes to the vegetable mixture.
- This lasagna can be made a day ahead and stored in the fridge before baking.
