A delightful twist on a classic lasagna, this Lasagna Soup combines flavors of turkey bacon and beef for a comforting meal.

  • 1 pound ground beef
  • 6 slices turkey bacon
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add ground beef, onion, and garlic to the pot and cook until browned.
  3. Stir in diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add the broken lasagna noodles and cook until tender.
  5. Serve hot, topped with ricotta, mozzarella, and Parmesan cheeses.
