Korean Style Pot Roast

A delicious and unique take on the classic pot roast with Korean flavors.

  • 2 pounds beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, chopped
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1/2 cup beef broth

Instructions

  1. In a large bowl, mix soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, green onions, gochugaru, and beef broth.
  2. Place the beef chuck roast in a slow cooker and pour the marinade over it.
  3. Cover and cook on low for 6-8 hours or until the meat is tender.
  4. Remove the meat and let it rest before slicing.
  5. Serve with rice and vegetables.

Notes

  • For added depth of flavor, sear the meat before adding it to the slow cooker.
  • Adjust the spice level by varying the amount of gochugaru.
