Kielbasa Potato Soup

  • 4 cups diced potatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the kielbasa over medium heat.
  2. Add onions and garlic, sauté until softened.
  3. Stir in the potatoes and broth; bring to a boil.
  4. Reduce heat, cover, and simmer until potatoes are tender.
  5. Stir in cream, thyme, salt, and pepper; heat through.
  6. Serve warm.

  • For added flavor, try using smoked kielbasa.
