Jerk Chicken Bowls with Mango Salsa and Coconut Rice

Enjoy a burst of flavors with these Jerk Chicken Bowls topped with fresh Mango Salsa, served alongside Coconut Rice.

Ingredients

  • 4 pieces chicken thighs
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 mango, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Marinate chicken thighs in jerk seasoning and olive oil for at least 30 minutes.
  2. Cook chicken on a grill or skillet until fully cooked.
  3. In a pot, combine coconut milk and jasmine rice, cook according to rice package instructions.
  4. In a bowl, mix diced mango, red onion, cilantro, and lime juice to make the salsa.
  5. Serve the grilled chicken over a bed of coconut rice, topped with mango salsa.

Notes

  • For spicier chicken, add more jerk seasoning.
  • Fresh lime juice adds a nice zing to the dish.
