  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup uncooked pasta
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add olive oil to the pot and sauté the onion, carrots, and celery until soft.
  3. Stir in garlic and cook until fragrant.
  4. Add the chicken broth, diced tomatoes, pasta, basil, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer until pasta is cooked.
  6. Stir in spinach and cook until wilted. Add crumbled turkey bacon back to the pot.
  7. Serve hot and enjoy!

Notes

  • For a vegetarian version, replace turkey bacon with mushrooms.
  • Can be prepared in advance and reheated.
