- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup uncooked pasta
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
- Add olive oil to the pot and sauté the onion, carrots, and celery until soft.
- Stir in garlic and cook until fragrant.
- Add the chicken broth, diced tomatoes, pasta, basil, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer until pasta is cooked.
- Stir in spinach and cook until wilted. Add crumbled turkey bacon back to the pot.
- Serve hot and enjoy!

- For a vegetarian version, replace turkey bacon with mushrooms.
