Irresistible Korean Pot Roast

  • 3 pounds chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 cup beef broth
  • 2 cups carrots, chopped
  • 1 onion, quartered
  • 2 tablespoons sesame oil

Instructions

  1. In a large skillet, heat sesame oil over medium-high heat. Sear the chuck roast on all sides until browned.
  2. In a slow cooker, add soy sauce, brown sugar, garlic, ginger, and beef broth. Place the seared roast on top.
  3. Add carrots and onions around the roast.
  4. Cover and cook on low for 8-10 hours or high for 4-5 hours until tender.
  5. Serve hot and enjoy!
