Hobo Casserole with Ground Beef & Potatoes

A delicious and simple hobo casserole that combines ground beef and potatoes for a hearty meal.

Ingredients

  • 1 pound ground beef
  • 4 large potatoes, sliced
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. In a large casserole dish, layer the sliced potatoes and chopped onions.
  4. Spread the browned beef over the potatoes and onions.
  5. Pour the cream of mushroom soup over the top.
  6. Sprinkle with shredded cheese.
  7. Cover with aluminum foil and bake for 1 hour.
  8. Remove the foil and bake for an additional 15 minutes until cheese is bubbly.

Notes

  • Feel free to add other vegetables such as bell peppers or carrots.
