High Protein Tomato Soup

A comforting and protein-packed tomato soup featuring delicious turkey bacon, perfect for cold nights.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups chicken broth
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and crumble, leaving drippings in the pot.
  2. Add olive oil, onion, and garlic to the pot. Sauté until onion is translucent.
  3. Stir in crushed tomatoes, chicken broth, sugar, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream and crumbled turkey bacon. Heat through and serve.

Notes

  • For a spicier version, add red pepper flakes.
  • You can top with fresh basil for added flavor.
