Hidden Veggie Soup

A comforting and nutritious soup packed with hidden vegetables that the whole family will love.

Ingredients

  • 2 cups chopped carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 3 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add the onions, carrots, and celery, cooking until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the vegetable broth, diced tomatoes, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in the spinach and cook for another 5 minutes.
  7. Blend the soup until smooth or leave it chunky, as per preference.
  8. Serve hot and enjoy!

  • For a creamier soup, add a splash of cream or milk before serving.
