- 4 large bell peppers
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, spinach, basil, parsley, garlic powder, salt, and pepper.
- Stuff the peppers with the cheese mixture and place them upright in a baking dish.
- Pour marinara sauce over the stuffed peppers.
