Herby Ricotta Stuffed Peppers

  • 4 large bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine ricotta cheese, Parmesan cheese, spinach, basil, parsley, garlic powder, salt, and pepper.
  4. Stuff the peppers with the cheese mixture and place them upright in a baking dish.
  5. Pour marinara sauce over the stuffed peppers.
  6. Bake in the preheated oven for 30-35 minutes.
  7. Let cool for a few minutes before serving.
