Heavenly Raspberry Chocolate Mousse Cake

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup raspberry puree
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together the sugar, eggs, milk, vegetable oil, and vanilla until smooth.
  4. Combine the wet and dry ingredients, then add in the melted chocolate chips.
  5. Pour the batter into a greased cake pan and bake for 30-35 minutes.
  6. Let the cake cool completely before adding the mousse.
  7. Whip the heavy cream until stiff peaks form, then gently fold in the raspberry puree.
  8. Spread the mousse over the cooled cake and refrigerate for at least 2 hours.
  9. Serve chilled and enjoy!

Notes

  • For a more intense chocolate flavor, use dark chocolate chips.
  • Add fresh raspberries on top for garnish.
